Capua, who with us has in common the perfume as a family passion, has developed a two -stroke extraction method. It is one of those hidden masterpieces that shine here and there, especially in southern Italy, and that deserves to be told. First of all, the essential oil of only peel, brown and concentrate is extracted; Then, when the ripening is at the peak, it is the turn of the whole fruits that are pressed, passed into a shaded extractor, finally centrifuged to separate the essential oil from the juice. Our Orange of Sicily was born like this, as a perfect idealization of a symbol fruit that collects the sun, colors and the perfume of the island in a spring morning.
